Foods' Sensory Properties & Healthy Eating - Public Lecture, November 22

The Fall 2006 session of OAC's public lecture series continues on Wednesday,
November 22, with the inaugural Alexander Pearson Lectureship in Food
Science. Developed in memory of Alexander Pearson, an OAC '42 graduate and
former professor in Food Science, the lectureship is designed to stimulate
scholarship and interaction among faculty, students and community leaders on
current and emerging issues in Food Science.
This year's Pearson lecture will feature renowned sensory scientist Dr.
Conor Delahunty, Science Manager (Food Quality) for the Commonwealth
Scientific and Industrial Research Organisation (CSIRO), Australia.
The sensory sciences are central to understanding food choice and
acceptability. Perception of sensory properties (such as taste, smell,
appearance and texture) can be studied by determining relationships between
food stimuli, provided by composition and structure, and consumer response.
Applied to the study of food product quality, sensory science provides a
better understanding of consumer behaviour in relation to food choice.
Inappropriate food choices are contributors to the problem of heart disease,
obesity, diabetes and some forms of cancer. Food choice by children in
relation to childhood obesity and nutritional choices for healthy living in
the aging population are two areas of huge current concern.
In his upcoming lecture, Professor Delahunty will examine the importance of
foods' sensory properties both in the formation of children's dietary habits
and in healthy eating among the older population.

About the Speaker:
Dr. Conor Delahunty is Science Manager, Food Quality for the Commonwealth
Scientific and Industrial Research Organisation (CSIRO), Australia. Formerly
the Director of the Sensory Science Research Centre at the University of
Otago, New Zealand, Dr. Delahunty's research interests also include the
contribution of sensory properties in new product acceptability and the
development of consumer acceptance and preference testing methodologies.
Dr. Delahunty received his BAgrSc and MSc in Food Science at University
College Dublin, Ireland, and his PhD in Sensory Science at the University of
Strathclyde, Scotland.
